I have used all kinds of wood to carve, however, the best I have used and continue to use is Minnisota grown basswood.  My friend and Past` President of the Chip-O-Tex Carving Club,  Al Lilgreen,  lives in Minnisota and has a stand of Basswood trees on his property.  He  has built a saw mill to cut his wood.  After cutting, he air drys his wood for a minimum of one year.  This wood is fantastic.  It is very white and carves wonderfully.  He not only sells his wood at extremely reasonable prices, but also has hundreds of patterns he has cut out on the bandsaw.  I would recommend contacting him.  He could give you quotes and ship wood or cutouts through the mail
